Italian Quinoa Salad with Basil Dressing
- 1 cup green beans, cut into 1 cm pieces
- 1 cup cucumbers, peeled and pitted, and diced
- 2 cups of quinoa, soaked
- Ten cherry tomatoes, cut into quarters
- Two tablespoons + 1 teaspoon of capers, rinsed
- Two tablespoons basil, chopped
- One tablespoon lemon juice
- One tablespoon olive oil
- salt and ground black pepper
Combine all ingredients in a large bowl, season to taste, and add lemon juice on the table when serving the dish.
Spicy Thai Noodle Soup
Put seafood (I took a sea cocktail) and diced pineapples in a pan with vegetables. Put out another 3-4 minutes.
